Ingredients:
- 1 cooked pie crust in a 9” deep pie pan (for best results)
Filling:
- 1 1/2 cups milk chocolate chips
- 2 tablespoons butter
- 2/3 cup sugar
- 1/2 cup cornstarch
- 3 cups whole milk
- 4 large egg yolks
- 2 teaspoons vanilla extract
Topping:
- 1/3 cup packed brown sugar
- 1/2 cup heavy whipping cream
- 1/3 cup sweetened condensed milk
- 1/4 cup butter
- 2 large egg yolks
- 1 1/2 cups sweetened coconut flakes
- 1 tablespoon vanilla extract
- 2/3 cup coarsely chopped salted pecans
Instructions:
- Filling:
a. Microwave chocolate chips and butter in 10-15 second increments until melted and smooth.
b. In a saucepan, mix sugar and cornstarch, then whisk in whole milk. Cook over medium heat until thickened and bubbly.
c. Reduce heat, cook for 2 more minutes, stirring constantly. Remove from heat.
d. Mix a small amount of hot mixture with egg yolks in a bowl. Add egg yolk mixture to pan, whisking constantly. Bring to a gentle boil, cook for 2 more minutes, stirring.
e. Remove from heat, whisk in chocolate mixture and vanilla. Pour into baked pie crust and let set completely. - Topping:
a. In a saucepan, combine brown sugar, butter, heavy cream, and sweetened condensed milk. Bring to a gentle boil, stir until sugar dissolves. Remove from heat.
b. Whisk egg yolks with a small amount of hot mixture, then return to saucepan. Cook for 2-3 minutes until thickened, stirring constantly.
c. Remove from heat, add vanilla, coconut, and pecans. Cool for 10 minutes, then pour over chocolate filling.
