Ingredients:
1 cup fresh ginger, peeled and sliced
1 cup granulated sugar
4 cups water
2 lemons, juiced
Sparkling water, to serve
Ice cubes, for serving
Lemon slices and fresh mint leaves, for garnish
Directions:
In a saucepan, combine the sliced ginger, granulated sugar, and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.
Reduce the heat to low and let the mixture simmer for 10 minutes.
Remove the saucepan from the heat and allow the ginger syrup to cool to room temperature.
Strain the syrup through a fine-mesh sieve into a pitcher, pressing on the ginger to extract all the liquid.
Stir in the freshly squeezed lemon juice.
To serve, fill glasses with ice cubes and pour the ginger syrup over the ice.
Top off each glass with sparkling water and gently stir to combine.
Garnish with lemon slices and fresh mint leaves.
