Beetroot Salad

Ingredients:

  • 2 large beetroots, peeled and grated
  • 1 green apple, grated
  • 1 carrot, grated
  • Juice of 1 lemon
  • A handful of fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • A handful of walnuts, chopped (optional)

Preparation:

  1. In a large mixing bowl, combine the grated beetroots, green apple, and carrot.
  2. Add the lemon juice, chopped parsley, and olive oil to the bowl. Mix well to ensure all ingredients are evenly coated.
  3. Season with salt and pepper according to your preference.
  4. If using, sprinkle the chopped walnuts over the salad for added crunch.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to enhance the flavors.
