Ingredients:
2 pounds round steak, cut into serving-size pieces
Salt and pepper to taste
1/4 cup all-purpose flour
2 tablespoons vegetable oil
1 onion, sliced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon dried basil
1/2 cup beef broth or water
2 tablespoons cornstarch (optional, for thickening)
Chopped fresh parsley for garnish (optional)
Instructions:
Season the round steak pieces with salt and pepper, then dredge them in flour, shaking off any excess.
Heat vegetable oil in a large skillet over medium-high heat. Brown the steak pieces on both sides, working in batches if necessary to avoid overcrowding the skillet. Transfer the browned steak to the slow cooker.
In the same skillet, add the sliced onion and minced garlic. Cook for 2-3 minutes, or until softened and fragrant. Transfer the onions and garlic to the slow cooker, arranging them over the steak.
In a medium bowl, mix together diced tomatoes, tomato sauce, Worcestershire sauce, dried thyme, dried oregano, paprika, and dried basil. Pour this mixture over the steak and onions in the slow cooker.
Pour beef broth or water over the steak and tomato mixture in the slow cooker.
Cover and cook on low heat for 6-8 hours, or until the steak is tender.
Optional: If you prefer a thicker sauce, mix cornstarch with a little water to form a slurry. Stir the slurry into the slow cooker during the last 30 minutes of cooking time. Allow the sauce to thicken.
Once the steak is cooked and the sauce is thickened (if using cornstarch), taste and adjust seasoning with more salt and pepper if needed.
Serve the Slow Cooker Swiss Steak hot, garnished with chopped fresh parsley if desired.
