Liege Waffles

Ingredients:
3/4 cup whole milk, scalded
2 tablespoons warm water
1 1/2 teaspoons granulated sugar
2 teaspoons instant yeast
2 large eggs, lightly whisked
1 cup unsalted butter, softened
3 tablespoons honey
3 teaspoons vanilla extract
2 cups bread flour
1 1/2 to 1 3/4 cups all-purpose flour
2 cups Belgian pearl sugar
1 cup heavy whipping cream
1/2 cup powdered sugar
1/3 cup mascarpone
1 teaspoon vanilla extract

Instructions:
In a bowl, combine the milk, water, 1 1/2 teaspoons sugar, and yeast. Let the yeast proof until foamy.
In a separate bowl, cream together the butter and 3 tablespoons of granulated sugar. Add the eggs, honey, and vanilla, mixing well.
Combine the yeast mixture with the egg mixture.
In a stand mixer with a dough hook, add bread flour to the wet ingredients until fully incorporated. Add all-purpose flour gradually and allow the dough to rest covered for 4 hours at room temperature.
Knead Belgian pearl sugar into the dough and divide into 7-8 balls.
Preheat a greased waffle iron and cook each dough ball until golden brown.
For the whipped cream: Whip the heavy cream, powdered sugar, mascarpone, and vanilla until stiff peaks form. Serve atop the warm waffles.
