Irresistibly Delicious Stuffed Salmon with Spinach & Feta

Ingredients:
– 4 salmon fillets, skinless
– 2 cups fresh spinach, chopped
– 1/2 cup feta cheese, crumbled
– 1/4 cup cream cheese, softened
– 2 garlic cloves, minced
– 1 tablespoon olive oil
– 1 teaspoon lemon zest
– 1/2 teaspoon paprika
– Salt and pepper to taste

Directions:
1. Preheat your oven to 375°F (190°C).
2. Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 1 minute. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat.
3. In a bowl, mix the cooked spinach with feta cheese, cream cheese, and lemon zest. Stir until well combined.
4. Carefully slice each salmon fillet down the middle to create a pocket, being careful not to cut all the way through.
5. Stuff each fillet with the spinach-feta mixture and secure with toothpicks if necessary.
6. Place the stuffed salmon on a greased baking sheet. Sprinkle with paprika, salt, and pepper.
7. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
8. Serve warm with a side of your favorite vegetables or rice.
