Taco-sized flour tortillas (large enough to fold)
1 lb ground beef or chicken (or your choice of protein)
1 packet taco seasoning (or homemade taco seasoning)
1 cup shredded cheese (cheddar, Mexican blend, or your favorite)
1/2 cup sour cream (optional)
1/4 cup salsa (optional)
Chopped parsley or cilantro (for garnish)
Olive oil (for cooking)
Instructions:
Cook the Meat:
In a skillet, cook the ground meat (beef or chicken) over medium heat until fully browned and cooked through.
Drain any excess fat, then add the taco seasoning along with a bit of water (as per the seasoning packet instructions). Stir and let it simmer for a few minutes until the meat is fully flavored and saucy.
Prepare the Tortillas:
Lightly heat the tortillas in a pan or microwave so they become more pliable for folding.
Assemble the Cheesy Tacos:
Place a tortilla flat on a clean surface.
Add a generous amount of the seasoned meat mixture in the center of the tortilla.
Sprinkle a handful of shredded cheese on top of the meat.
Fold the Tacos:
Carefully fold the sides of the tortilla inward, then fold up the bottom and top, creating a “pocket” or sealed taco shape.
Cook the Tacos:
Heat a little olive oil in a skillet over medium heat.
Place the folded taco pockets seam-side down in the pan and cook for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese inside is melted.
Garnish & Serve:
Once cooked, remove from the skillet and garnish with chopped parsley or cilantro for a fresh touch.
Serve with a side of sour cream, salsa, or your favorite dipping sauces.
Tips:
For extra flavor, you can add sautéed onions, peppers, or jalapeños to the meat mixture.
Feel free to use a blend of cheeses for more richness.
