Homemade Corn Salsa

Ingredients:


2 cups fresh corn kernels (about 2-3 ears of corn)
1 small red onion, finely chopped
1 red bell pepper, diced
1 jalapeno pepper, seeded and finely chopped
1 large tomato, diced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 tablespoon olive oil
Salt and pepper, to taste

Directions:


In a bowl, combine fresh corn kernels, chopped red onion, diced red bell pepper, chopped jalapeno pepper, diced tomato, and chopped cilantro.
Drizzle lime juice and olive oil over the mixture.
Season with salt and pepper, adjusting to taste.
Toss everything together until well combined.
Cover and refrigerate for at least 30 minutes to allow flavors to meld.
Serve chilled as a dip with tortilla chips or as a topping for tacos, grilled chicken, or fish.
