Ingredients:
2 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup mashed bananas (about 2 medium bananas)
1/2 cup sour cream
1 stick (1/2 cup) butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
2 teaspoons vanilla extract
Optional: 1/2 cup mini chocolate chips, 1/2 cup chopped walnuts
Directions:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, whisk together the flour, baking soda, baking powder, and salt.
In a separate bowl, mix together the mashed bananas and sour cream.
Beat the softened butter and sugars together until fluffy. Add the egg and vanilla extract, and beat until combined.
Gradually mix in the dry ingredients, then fold in the banana mixture until well combined.
Stir in the optional mini chocolate chips and chopped walnuts if using.
Drop spoonfuls of the cookie dough onto the prepared baking sheets, leaving space between each cookie.
Bake for 12-15 minutes, or until the cookies are golden brown.
