Strawberry Kiwi Cheesecake


Ingredients:
For the Crust:


1 1/2 cups crushed graham crackers
6 tablespoons unsalted butter, melted
1/3 cup sugar
For the Kiwi Mousse:
2 ripe kiwis, peeled and pureed
1/2 cup heavy cream
1/4 cup sugar
1 teaspoon gelatin, dissolved in 2 tablespoons warm water
For the Strawberry Slices Layer:
1 cup fresh strawberries, thinly sliced
For the Strawberry Mousse:
1 cup fresh strawberries, pureed
1/2 cup heavy cream
1/4 cup sugar
1 teaspoon gelatin, dissolved in 2 tablespoons warm water
For the Topping:
Whipped cream
Sliced strawberries and kiwis for garnish


Instructions:
Prepare the Crust:


Mix crushed graham crackers, melted butter, and sugar until well combined.
Press the mixture into the bottom of a 9-inch springform pan.
Chill in the refrigerator for 30 minutes.
Make the Kiwi Mousse:
In a bowl, combine kiwi puree, heavy cream, and sugar.
Stir in dissolved gelatin until smooth.
Pour the mixture over the chilled crust and refrigerate until set, about 1 hour.
Arrange the Strawberry Slices:
Layer thinly sliced strawberries over the set kiwi mousse.
Prepare the Strawberry Mousse:
Mix strawberry puree, heavy cream, and sugar in a bowl.
Stir in dissolved gelatin until well incorporated.
Pour the mixture over the strawberry slices and refrigerate until set, about 1 hour.
Add the Topping:
