Ingredients:
For the Meatloaf:
- 1.5 pounds ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup
For the Potato Layer:
- 2 pounds potatoes, peeled and sliced
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons butter
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
Directions:
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Press this meatloaf mixture into the bottom of a greased baking dish.
- Spread the ketchup evenly over the top of the meatloaf.
- Bake in the preheated oven for about 25 minutes.
- While the meatloaf is baking, boil the sliced potatoes until they’re tender, usually around 15 minutes. Drain them and mash them up with sour cream, milk, and butter. Season this mashed potato mixture with salt and pepper.
- Spread the mashed potatoes over the partially cooked meatloaf in the baking dish. Then, sprinkle with shredded cheddar cheese and chopped green onions.
- Pop the casserole back into the oven and bake for another 20 minutes, or until the cheese is all melted and wonderfully bubbly.
- Once it’s done, let it rest for about 10 minutes before serving up generous portions of this delicious casserole.
