Spicy Mango Salad



Ingredients:


2 ripe mangoes, peeled and diced
1 red bell pepper, thinly sliced
1/2 red onion, finely chopped
1 cucumber, peeled, seeded, and diced
1 jalapeño pepper, seeded and minced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
2 tablespoons honey
Salt to taste
Optional: 1/4 cup chopped roasted peanuts for garnish


Directions:

In a large mixing bowl, combine the diced mangoes, red bell pepper, red onion, cucumber, jalapeño, and chopped cilantro.
In a separate small bowl, whisk together lime juice, honey, and a pinch of salt until well combined.
Pour the dressing over the mango mixture and toss gently to coat evenly.
Taste and adjust seasoning, adding more salt or lime juice if desired.
If using, sprinkle chopped roasted peanuts over the salad for added crunch and flavor.
Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
