Ingredients:
1 small head of cauliflower, cut into small florets
1/2 cup cashews, toasted
1/2 cup dried cranberries or raisins
2 green onions, thinly sliced
1/4 cup chopped fresh parsley or cilantro
For the dressing:
1/4 cup mayonnaise
2 tablespoons Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon apple cider vinegar
Salt and pepper, to taste
Directions:
In a large bowl, combine cauliflower florets, toasted cashews, dried cranberries or raisins, sliced green onions, and chopped parsley or cilantro.
In a separate small bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, honey, apple cider vinegar, salt, and pepper to make the dressing.
Pour the dressing over the cauliflower mixture and toss until everything is evenly coated.
Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
