French Toast Muffins

Ingredients:


5 large eggs
1 cup whole milk
3 tablespoons granulated sugar
2 teaspoons ground cinnamon
1 teaspoon pure vanilla extract
12 slices of white bread, cubed
Additional cinnamon and sugar for topping
Powdered sugar and syrup for serving


Directions:


Preheat your oven to 350°F (175°C).
In a large mixing bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla extract until thoroughly combined.
Add the cubed bread to the egg mixture and stir to ensure all pieces are evenly coated.
Grease a 12-cup muffin pan and spoon the bread mixture into each cup, pressing down lightly to compact.
Sprinkle the tops with additional cinnamon and sugar.
Bake in the preheated oven for 25-30 minutes, until the tops are golden brown and crisp.
Allow to cool slightly before serving. Top with powdered sugar and drizzle with syrup.
