Ingredients:
2.25 lb of ground beef
Seasonings: 1/4 tsp each of seasoned salt, chili powder, onion powder, garlic powder, black pepper
1 tbsp of beef broth
2 tbsp of Lipton onion soup packet
1/4 cup each of purple onions, yellow onions, green peppers, red peppers
8 tortillas
Salsa con queso cheese dip
2 tbsp of white rice per roll-up
1 tsp garlic butter (for skillet)
Dipping Sauce:
2 tbsp mayo
1/2 tbsp sour cream
3 tsp Kinder buttery buffalo sauce
Red pepper flakes and parsley for garnish
Directions:
In a large skillet, cook the ground beef with the seasoned salt, chili powder, onion powder, garlic powder, black pepper, beef broth, and Lipton onion soup packet until fully browned.
Add the purple onions, yellow onions, green peppers, and red peppers to the skillet and cook until the vegetables are tender.
Lay out the tortillas and spread a generous amount of salsa con queso cheese dip over each.
Spoon the beef and vegetable mixture onto each tortilla, adding about 2 tbsp of white rice to each.
Roll up the tortillas tightly and set aside.
In a separate skillet, melt the garlic butter over medium heat. Place the roll-ups in the skillet and cook for 3 minutes on each side or until golden brown.
For the dipping sauce, mix together the mayo, sour cream, and Kinder buttery buffalo sauce. Garnish with red pepper flakes and parsley.
