Classic Hummus

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Servings: 4

Ingredients:
2 cups of chickpeas
6 tbsp of tahini
5 tbsp of lemon juice
Salt
Olive oil
Parsley
Cumin
Paprika or sumac
Baking Soda

Instructions:
Step 1: Prepare Chickpeas
Soak the chickpeas in water overnight.
Drain and rinse the chickpeas.
In a large pot, cover the chickpeas with water, add a pinch of baking soda, and bring to a boil. Simmer for about 1 hour or until chickpeas are very soft. Skim off any foam that forms on the surface.
Step 2: Blend Ingredients
In a food processor, combine the cooked chickpeas, tahini, lemon juice, salt to taste, and a dash of cumin.
Blend until smooth, adding a little water if necessary to reach your desired consistency.
Step 3: Serve
Transfer the hummus to a serving dish.
Drizzle with olive oil and sprinkle with chopped parsley and paprika or sumac for garnish.
Serve with pita bread, crackers, or fresh vegetables for dipping.
