Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
3 tablespoons butter
5 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
2 cups spinach leaves
Directions:
Season chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Stir in chicken broth, heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Bring to a simmer.
Add spinach to the sauce and cook until wilted, about 2-3 minutes.
Return the chicken to the skillet and spoon sauce over it. Cook for an additional 5 minutes or until the chicken is cooked through and the sauce has thickened.
