Banana Crumb Cake

Ingredients:

For the cake:
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
For the crumb topping:
1 cup light brown sugar
1/2 cup all-purpose flour
1/4 cup unsalted butter, melted
1 teaspoon ground cinnamon
Directions:

Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a bowl, combine flour, baking soda, and salt for the cake.
In another bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, then stir in vanilla and bananas.
Gradually add the flour mixture, alternating with buttermilk, and mix until just combined.
Pour batter into the prepared pan.
For the crumb topping, mix brown sugar, flour, melted butter, and cinnamon until crumbly. Sprinkle over the batter.
Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
