Breakfast Sandwiches and Cheesy Grits

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/4 cup cannabis-infused milk (see below for recipe)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Cannabis-Infused Milk:

  • 1 cup whole milk
  • 1 gram decarboxylated cannabis (THC or CBD content as desired)

Instructions for Cannabis-Infused Milk:

  1. Heat the milk in a saucepan over low heat, making sure it does not boil.
  2. Add the decarboxylated cannabis and simmer for 45 minutes, stirring occasionally.
  3. Strain the milk through a cheesecloth to remove the plant material.
  4. Store in an airtight container in the refrigerator.

Instructions for Pancakes:

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine buttermilk, cannabis-infused milk, egg, melted butter, and vanilla extract.

  3. Strain the butter through a cheesecloth to remove the plant material.
  4. Store in an airtight container in the refrigerator.

Instructions for Grits:

  1. Bring water to a boil in a saucepan. Add salt and gradually whisk in the grits.
  2. Reduce the heat to low and simmer, stirring frequently, until thickened (about 20-25 minutes).
  3. Stir in the cannabis-infused butter and shredded cheddar cheese until melted and creamy.
  4. Season with black pepper to taste.

Assembly

  1. Serve the pancake sandwiches alongside a generous portion of cheesy grits.
