Ingredients:
1 pound ground beef
1/4 cup breadcrumbs
1/4 cup Parmesan cheese, grated
1 large egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
12 small cubes of mozzarella cheese
1 can 12 oz refrigerated biscuits
1/4 cup unsalted butter, melted
1 teaspoon garlic powder
1 tablespoon fresh parsley, chopped
Directions:
Preheat oven to 375F 190C. Line a baking sheet with parchment paper.
In a bowl, mix together ground beef, breadcrumbs, Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper.
Take a small portion of the meat mixture, flatten it, and place a cube of mozzarella in the center. Enclose the cheese with the meat, forming a ball. Repeat with remaining meat and cheese.
Flatten each biscuit slightly, then wrap around the meatballs, sealing the edges.
Mix melted butter with garlic powder and parsley. Brush the meatball bombs with this mixture.
Place the meatball bombs on the prepared baking sheet and bake for 18-20 minutes or until golden and cooked through.
