Cheesy Asparagus Casserole

Ingredients:

1 bunch of asparagus, trimmed
2 tablespoons olive oil
Salt and pepper, to taste
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1/2 cup heavy cream
1/4 cup milk
2 tablespoons butter
2 cloves garlic, minced
1/4 cup breadcrumbs (optional for topping)
Fresh thyme (optional, for garnish)
Instructions:

Preheat the oven to 375°F (190°C). Grease a baking dish with a little butter or oil.
Prepare the asparagus: Trim the tough ends of the asparagus. Toss them with olive oil, salt, and pepper, then place them in the prepared baking dish in a single layer.
Make the cheese sauce:
In a medium saucepan, melt the butter over medium heat.
Add the minced garlic and sauté for 1 minute until fragrant.
Stir in the heavy cream and milk. Cook for 2-3 minutes, until it begins to simmer.
Gradually whisk in the mozzarella and Parmesan cheese. Stir constantly until the cheese has melted and the sauce is smooth.
Season with salt and pepper to taste.
Assemble the casserole:
Pour the cheese sauce over the asparagus in the baking dish, ensuring it’s evenly covered.
Optionally, sprinkle breadcrumbs on top for a crunchy texture.
Bake in the preheated oven for 20-25 minutes, or until the asparagus is tender and the cheese is bubbly and golden brown.
Garnish with fresh thyme, and serve immediately.
