🍓🍫 White Chocolate Strawberry Cheesecake
🥣 Ingredients:
For the crust:
1½ cups graham cracker crumbs (or crushed vanilla wafers)

¼ cup sugar

6 tbsp butter, melted

For the filling:
24 oz (3 blocks) cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

8 oz white chocolate, melted & slightly cooled

½ cup sour cream or heavy cream

For the strawberry topping:
1½–2 cups fresh strawberries, sliced

¼ cup sugar

1 tbsp lemon juice

1 tbsp cornstarch + 2 tbsp water (to thicken)

👩‍🍳 Instructions:
🍪 1. Make the Crust
Preheat oven to 325°F (163°C).

Mix graham crumbs, sugar, and melted butter until combined.

Press into the bottom of a 9-inch springform pan. Use the bottom of a glass to pack it in.

Bake for 8–10 minutes, then cool.

🍫 2. Make the Cheesecake Filling
Beat softened cream cheese until smooth (no lumps!).

Add sugar and vanilla, and mix well.

Beat in eggs, one at a time — don’t overmix.

Stir in melted white chocolate, then fold in sour cream or heavy cream until smooth and creamy.

🧁 3. Bake
Pour filling over cooled crust. Tap the pan to release air bubbles.

Place the springform pan in a larger pan and fill the outer pan with hot water (water bath helps prevent cracking).

Bake for 55–65 minutes, or until the center is just set and slightly jiggly.

Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.

After cooling, refrigerate at least 4 hours (overnight = best texture).
