Cloud Cake – Blender Method

Ingredients:

200g (7 oz) cream cheese, softened

50g (3 tbsp) unsalted butter, softened

100ml (7 tbsp) milk

4 large eggs, separated

70g (⅓ cup) granulated sugar

40g (⅓ cup) cake flour

10g (1 tbsp) cornstarch

1 tsp vanilla extract

Instructions:

1. Preheat your oven to 150°C (300°F). Line an 8-inch round cake pan with parchment paper.

2. In a blender, add cream cheese, butter, milk, egg yolks, vanilla, cake flour, and cornstarch. Blend until smooth.

3. In a separate bowl, beat the egg whites until foamy. Gradually add the sugar and beat until soft peaks form.

4. Gently fold the egg whites into the cream cheese mixture in 3 parts, being careful not to deflate the batter.

5. Pour the mixture into your prepared pan.

6. Place the cake pan in a larger baking dish and pour hot water into the larger dish to create a water bath.

7. Bake for 60 minutes, then turn off the oven and leave the cake inside with the door slightly ajar for 15 more minutes.

8. Remove and let cool completely. Refrigerate before serving for best texture.
