Carrot and Orange Cake Without Flour or Sugar
Instructions:

1. Preheat oven to 175°C (350°F). Grease a loaf pan or line with parchment paper.

2. Blend the dates with orange juice and vanilla extract (if using) until smooth, creating a natural sweet paste.

3. In a large bowl, whisk the eggs, then mix in grated carrots, orange zest, and the blended date mixture.

4. Add dry ingredients: almond flour, oat flour, baking powder, cinnamon, and salt. Stir until well combined.

5. Pour the batter into the prepared pan and smooth the top.

6. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
