“🍲 Creamy Parmesan Italian Sausage Ditalini Soup

Ingredients:

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions:

  1. Brown the Sausage: In a large pot or Dutch oven, brown the Italian sausage over medium heat, breaking it up with a spoon as it cooks. Remove the sausage from the pot and set aside.
  2. Sauté Vegetables: Add the olive oil to the pot and sauté the onion and garlic until softened, about 5 minutes.
  3. Combine Ingredients: Stir in the diced tomatoes, chicken broth, oregano, and red pepper flakes (if using). Bring to a simmer.
  4. Cook Pasta: Add the ditalini pasta to the pot and cook according to package directions, stirring occasionally.
  5. Add Cream and Cheese: Stir in the heavy cream and Parmesan cheese until melted and smooth.
  6. Return Sausage: Add the cooked sausage back to the pot and stir to combine.
  7. Season and Serve: Season with salt and pepper to taste. Serve immediately with additional grated Parmesan cheese, if desired.
