Grilled Cheese with Gouda, Roasted Mushrooms, and Onions
Ingredients:
8 ounces mushrooms, sliced
1 medium onion, sliced (preferably sweet)
2 tablespoons olive oil
Salt and pepper, to taste
4 tablespoons butter
4 slices bread of choice
1 cup gouda cheese, shredded
Directions:
Preheat the Oven:
Preheat the oven to 400°F (200°C).
Prepare the Vegetables:
On a baking sheet, toss the sliced mushrooms and onion with olive oil. Sprinkle with salt and pepper to taste. Roast in the oven for about 20 minutes, or until they reach your desired level of tenderness and caramelization.
Melt the Butter:
In a skillet over medium heat, melt the 4 tablespoons of butter.
Assemble the Sandwiches:
While the butter is melting, assemble each sandwich. On one slice of bread, layer shredded gouda, then add a generous amount of roasted mushrooms and onions. Add another layer of gouda and season with additional salt and pepper if desired. Top with the second slice of bread and press together lightly.
Grill the Sandwiches:
Place one sandwich in the melted butter briefly, then flip it over to coat the other side with butter. Repeat with the second sandwich. Cook each sandwich for about 2 minutes on one side until lightly browned. Gently flip and cook for an additional 2-3 minutes on the other side, or until the cheese is melted and the bread is golden brown.
Serve Immediately:
Slice the grilled cheese sandwiches in half and serve hot.
