Ingredients:

  • 16 ounces cream cheese (or American Neufchâtel) softened
  • 1 cup sliced green olives with pimientos
  • 3 tablespoons mayonnaise
  • 3 tablespoons olive brine from the jar of olives
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Combine Ingredients: In a medium bowl, combine softened cream cheese, sliced olives with pimientos, mayonnaise, and olive brine.
  2. Mix Well: Stir or beat with an electric mixer until smooth and creamy.
  3. Fold in Feta: Gently fold in the crumbled feta cheese.
  4. Chill and Serve: Cover and chill for at least 30 minutes before serving. This allows the flavors to meld.

Serving Suggestions:

  • Serve with crackers, crostini, pita bread, or vegetables like carrot sticks and celery.
  • Use it as a dip for pita chips or tortilla chips.
  • Spread it on sandwiches or wraps.

Tips:

  • For a spicier spread, add a finely chopped jalapeño or a dash of hot sauce.
