Turmeric Chicken Anti-Inflammatory Soup

INGREDIENTS:
Anti-Inflammatory Turmeric Chicken Soup

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 cups spinach
  • Salt and pepper to taste
  • Juice of 1 lemon INSTRUCTIONS:
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute.
  4. Incorporate the turmeric powder and continue cooking for another minute, stirring frequently.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Add the shredded chicken and coconut milk to the pot.
  7. Lower the heat and allow the soup to simmer for 15-20 minutes.
  8. Stir in the spinach and let it cook until wilted.
  9. Season the soup with salt, pepper, and freshly squeezed lemon juice before serving.
