Turmeric Chicken Anti-Inflammatory Soup
INGREDIENTS:
Anti-Inflammatory Turmeric Chicken Soup
- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon turmeric powder
- 4 cups chicken broth
- 1 cup coconut milk
- 2 cups spinach
- Salt and pepper to taste
- Juice of 1 lemon INSTRUCTIONS:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until it becomes translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional minute.
- Incorporate the turmeric powder and continue cooking for another minute, stirring frequently.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the shredded chicken and coconut milk to the pot.
- Lower the heat and allow the soup to simmer for 15-20 minutes.
- Stir in the spinach and let it cook until wilted.
- Season the soup with salt, pepper, and freshly squeezed lemon juice before serving.
