Just cooked up this delicious African Chicken Stew! It’s packed with flavor and perfect for a comforting dinner. 🍲🌶🥜

Ingredients:

2 lbs chicken thighs, bone-in and skin-on
1 large onion, diced
2 cloves garlic, minced
1 inch ginger, minced
2 tablespoons tomato paste
1 can (14 oz) diced tomatoes
1 can (14 oz) coconut milk
2 large carrots, sliced
1 bell pepper, chopped
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon cayenne pepper (adjust to taste)
2 tablespoons peanut butter
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)

Directions:

In a large pot or Dutch oven, brown the chicken thighs on both sides over medium heat. Remove and set aside.
In the same pot, add onion, garlic, and ginger, sautéing until the onions are translucent.
Stir in the tomato paste and cook for another minute.
Add diced tomatoes, coconut milk, carrots, bell pepper, cumin, coriander, and cayenne pepper. Bring to a simmer.
Return the chicken to the pot, cover, and let simmer for about 30 minutes.
Stir in the peanut butter and season with salt and pepper. Continue to simmer uncovered for another 10 minutes or until the stew thickens.
Garnish with fresh cilantro before serving.
