6 cups diced potatoes, peeled (about 4 medium potatoes)
1 cup shredded cheddar cheese
1/2 cup cooked and crumbled turkey (or bacon, if preferred)
1 packet ranch seasoning mix
4 cups chicken or vegetable broth
1 cup heavy cream (or half-and-half for a lighter version)
Salt and pepper, to taste
Optional Garnishes:
Additional shredded cheddar cheese
Crumbled turkey or bacon
Sliced green onions or fresh parsley
Instructions:
Prepare the Crock Pot:
In your crock pot, combine the diced potatoes, shredded cheddar cheese, crumbled turkey, and ranch seasoning mix.
Add Liquids:
Pour in the chicken or vegetable broth, and stir everything together to ensure the ingredients are evenly distributed.
Cook the Soup:
Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the potatoes are tender.
Add Heavy Cream:
About 30 minutes before serving, stir in the heavy cream (or half-and-half). Adjust the seasoning with salt and pepper to taste.
Optional Thickening:
If you prefer a thicker soup, use a potato masher or immersion blender to mash some of the potatoes directly in the pot. Alternatively, mix 1 tablespoon of cornstarch with 2 tablespoons of water to form a slurry and stir it into the soup.
