Ingredients:
3/4 cup butter, room temperature + 1 tablespoon
1/2 cup powdered sugar
1/4 teaspoon salt
1 3/4 cups all-purpose flour
1 package butterscotch chips (6 oz.)
1 cup finely chopped pecans
For Rum Glaze:
3 cups powdered sugar
3 to 4 tablespoons milk or water
1 teaspoon rum extract
For Topping:
1/2 cup chopped pecans
How To Make Butternut Cookies:
Cream Butter: In a bowl, cream together room temperature butter, powdered sugar, and salt until light and fluffy.
Add Flour: Blend in all-purpose flour and mix well.
Incorporate Mix-Ins: Add butterscotch chips and finely chopped pecans. Mix thoroughly by hand.
Shape Dough: Shape the dough into scant teaspoonful-sized balls and place them 1 inch apart on an ungreased cookie sheet.
Bake: Bake in a preheated 325°F oven for 15-20 minutes or until firm but not brown. Allow the cookies to cool on wire racks.
Prepare Rum Glaze: Mix powdered sugar, rum extract, and milk (or water) until smooth.
Glaze the Cookies: Dip the cookies in the rum glaze or use a spoon to pour the glaze over them.
Add Topping: Sprinkle chopped pecans over the glazed cookies. Allow the glaze to set up.
