Ingredients:
1 pound thick-cut bacon, diced 
1 large yellow onion, finely diced (about 1 ½ cups) 
3 medium jalapeño peppers, seeded and diced (about 1 cup) 
2 teaspoons garlic, minced 
½ cup light brown sugar, packed 
⅓ cup apple cider vinegar 
¼ cup maple syrup 
1 teaspoon chili powder 
Instructions:
1. Cook Bacon: In a medium skillet over medium heat, cook bacon until crispy. Place bacon on a paper towel-lined plate to drain. 
2. Prepare Pan: Leave about ¼ cup of bacon grease in the pan, carefully removing the rest. 
3. Caramelize Onions & Peppers: Add diced onion and jalapeños to the pan. Reduce heat to medium-low. Cook until onions are caramelized (15-20 minutes), stirring often. 
4. Add Remaining Ingredients: Mix in garlic, brown sugar, apple cider vinegar, maple syrup, chili powder, and cooked bacon. Simmer for 7-10 minutes, or until thickened to a jam-like consistency. 
5. Serve: Enjoy warm or cold. If refrigerated, warm slightly before serving. 
Note: Perfect as a topping for burgers, sandwiches, or just spread on toast!
