Banana Bread Cinnamon Rolls


Ingredients:
For the Dough:

  • 1 cup mashed ripe bananas (about 2-3 bananas)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk, warmed to about 110°F
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 2 large eggs
  • 4 cups all-purpose flour, plus extra for dusting
  • 1 teaspoon salt
    For the Filling:
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 2 teaspoons ground cinnamon
    For the Cream Cheese Icing:
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
    Directions:
  1. Activate the Yeast:
  • Combine warm milk, sugar, and yeast. Let it sit until foamy.
  1. Prepare the Dough:
  • Mix bananas, sugar, butter, eggs. Add yeast mixture, then flour and salt. Knead until smooth.
  1. First Rise:
  • Let the dough rise until doubled in size.
  1. Make the Filling:
  • Mix butter, brown sugar, cinnamon.
  1. Roll Out the Dough:
  • Roll the dough into a rectangle.
  1. Fill and Roll:
  • Spread filling, roll up the dough.
  1. Slice and Arrange:
  • Cut into pieces, place in a baking dish.
  1. Second Rise:
  • Let the rolls rise until puffed.
  1. Bake:
  • Bake until golden brown.
  1. Make the Cream Cheese Icing:
  • Beat cream cheese, butter, sugar, vanilla.
  1. Ice and Serve:
  • Spread icing over warm cinnamon rolls and enjoy!
