Ritz Cracker Salted Caramel Icebox Cake

Ingredients:

  • 1 box Ritz crackers
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup salted caramel sauce (store-bought or homemade)
  • Sea salt, for garnish

Directions:

  1. In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Gently fold in the sweetened condensed milk until well combined.
  3. Spread a thin layer of the whipped cream mixture on the bottom of a 9×13-inch baking dish.
  4. Arrange a single layer of Ritz crackers over the cream mixture.
  5. Spread another layer of the whipped cream mixture over the crackers.
  6. Drizzle salted caramel sauce over the whipped cream layer.
  7. Repeat the layers until all ingredients are used, ending with a final layer of whipped cream and a generous drizzle of salted caramel sauce on top.
  8. Cover and refrigerate for at least 4 hours or overnight for the best results.
  9. Before serving, sprinkle with a pinch of sea salt for garnish.
