Chunky Monkey Cupcakes

Ingredients:

Cupcakes:
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp kosher salt
3 ripe bananas
2 tbsp milk
1 tsp vanilla extract
1/2 cup butter, softened
1 cup white sugar
2 large eggs
1 cup walnuts, chopped
1 cup dark chocolate chunks

For Dark Chocolate Frosting:
1 cup very hot cream
1 cup dark chocolate chips
12 banana chips for garnish

Instructions:

Cupcakes:
Preheat oven to 350°F (175°C).
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
In another bowl, mash the bananas with the milk and vanilla extract.
In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
Combine the banana mixture with the butter mixture. Gradually add the dry ingredients, mixing until just combined.
Fold in the chopped walnuts and dark chocolate chunks.
Fill muffin cups lined with paper liners about 2/3 full with the batter.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely.

Frosting:
9️⃣ Pour the hot cream over the dark chocolate chips in a bowl. Let sit for a minute, then whisk until smooth and shiny.
Spread the dark chocolate frosting over the cooled cupcakes.
1️⃣1️⃣ Garnish each cupcake with a banana chip.
