Ingredients:
- ¼-⅓ cup of olive oil
- 6 large cloves of garlic, finely chopped or minced
- 1 ½ teaspoons of salt
- 1 teaspoon of dried parsley
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- ½ teaspoon of freshly cracked black pepper
- ¾ cup of freshly grated Parmesan cheese
- 3 pounds (1.5 kgs) of red potatoes, washed and quartered
- ½ cup of unsalted butter
- 4 tablespoons of fresh parsley, finely chopped (for serving)
- Directions:
- Preheat and Prep: Get your oven ready by preheating it to 400ºF (200°C). Grease a large baking sheet with non-stick spray or olive oil. Set it aside for later.
- Mix the Seasonings: In a bowl, mix together 1/4 cup of olive oil, chopped garlic, salt, dried parsley, thyme, oregano, black pepper, and Parmesan cheese. Make sure everything’s well combined. If it seems a bit dry, add a splash more olive oil to coat everything evenly.
- Coat the Potatoes: Toss your quartered potatoes in the seasoning mixture until they’re all coated nicely.
- Roast the Potatoes: Spread out your seasoned potatoes in a single layer on the prepared baking sheet. Make sure they’re spread out evenly so they cook evenly. Pop them in the oven and let them roast for about 45-50 minutes. Every 15 minutes or so, give them a turn with tongs or a spatula to make sure they’re browning evenly. If you like them extra crispy, you can broil them for a few minutes at the end.
- Prepare the Browned Butter: While your potatoes are roasting away, it’s time to make the magic happen with the browned butter. In a small pot or skillet over medium heat, melt your unsalted butter. Keep stirring and swirling the pan now and then to make sure it cooks evenly and doesn’t splatter.
- Browned Butter Magic: Watch as the butter starts to foam and change color from yellow to tan to a beautiful golden brown. Once you catch a whiff of that nutty aroma, take the pan off the heat. Give it a gentle stir with a wooden spoon to lift any browned bits from the bottom, then drizzle that glorious browned butter all over your roasted potatoes.
