Ingredients:
2 cups whole wheat flour
1/2 cup granulated sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 large eggs
1 cup unsweetened applesauce
1/4 cup unsweetened almond milk (or milk of choice)
2 cups finely chopped apples (about 2 medium apples)
1 teaspoon vanilla extract
Optional: powdered sugar for dusting
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the whole wheat flour, granulated sugar, baking powder, ground cinnamon, and salt.
In another bowl, whisk together the eggs, applesauce, almond milk, and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped apples.
Drop spoonfuls of the batter onto the prepared baking sheet. Bake for 15-20 minutes or until golden and cooked through.
Let cool slightly and dust with powdered sugar if desired.
