Ingredients:
3 medium cucumbers, finely diced
4 medium tomatoes, finely diced
1 small red onion, finely diced
1/4 cup fresh lime juice
2 tablespoons olive oil
1/2 teaspoon dried mint
Salt and pepper to taste
Fresh herbs (optional: parsley, mint, or cilantro), finely chopped
Directions:
In a large bowl, combine the diced cucumbers, tomatoes, and red onion.
In a small bowl, whisk together the lime juice, olive oil, dried mint, salt, and pepper.
Pour the dressing over the vegetables and toss gently to coat.
Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Just before serving, toss the salad again and garnish with fresh herbs if desired.
