Better Than Take-Out Fried Rice

Ingredients:

3 cups cooked rice, preferably cold
2 tablespoons sesame oil
2 eggs, lightly beaten
1 cup mixed vegetables (carrots, peas, corn)
1 cup cooked chicken, diced
3 tablespoons soy sauce
1 tablespoon oyster sauce
2 green onions, chopped
Salt and pepper to taste
Optional: sesame seeds for garnish

Preparation:

Step 1: Heat sesame oil in a large skillet or wok over medium heat.
Step 2: Add beaten eggs and scramble until cooked through. Remove from skillet and set aside.
Step 3: In the same skillet, add more sesame oil if needed and stir-fry the mixed vegetables until tender.
Step 4: Add cooked chicken to the skillet and stir-fry for another 2-3 minutes.
Step 5: Add cooked rice to the skillet and break up any clumps.
Step 6: Pour soy sauce and oyster sauce over the rice mixture and stir well to combine.
Step 7: Add the scrambled eggs back to the skillet and stir to incorporate.
Step 8: Cook for an additional 2-3 minutes, stirring frequently.
Step 9: Season with salt and pepper to taste, then garnish with chopped green onions and sesame seeds if desired.
