Greek Chicken Gyro

Ingredients:
4 Pita Breads
2 Chicken Breasts, thinly sliced
1 tablespoon Olive Oil
1 teaspoon Dried Oregano
1/2 teaspoon Garlic Powder
Salt and Pepper, to taste
1 cup Greek Yogurt
1 Cucumber, grated
2 cloves Garlic, minced
1 tablespoon Lemon Juice
1 Tomato, sliced
1/2 Red Onion, thinly sliced
1/4 cup Feta Cheese, crumbled
1/4 cup Fresh Parsley, chopped

Directions:
In a mixing bowl, combine the chicken slices with olive oil, oregano, garlic powder, salt, and pepper. Allow to marinate for at least 30 minutes to infuse the flavors.
Preheat a grill pan over medium heat. Cook the marinated chicken until it’s golden brown and thoroughly cooked, approximately 5-6 minutes on each side.
For the tzatziki sauce, in a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, and a pinch of salt. Set this aside for later.
Warm the pita breads slightly in the oven or on the grill pan, about a minute on each side, to make them pliable.
To assemble the gyros, spread a generous amount of tzatziki sauce on each pita bread. Layer on the chicken slices, tomato, red onion, crumbled feta, and parsley.
Carefully roll the pita around the fillings. Serve the gyros immediately while everything is still warm and delicious.
